Story

After a few years of hiatus, we are delighted to welcome the return of the Green Spring project — an initiative with both sentimental and strategic value to us. First imported four years ago, this coffee is the result of a collaboration between Ture Waji and Mike Mamo, two individuals who have played a key role in the development of our business in Ethiopia. Although the project was put on hold due to financial challenges and the duo’s intense involvement in other initiatives, its relaunch demonstrates their continued commitment to quality and community.

Green Spring is located in Sonkolle Kallato, in the Guji area — one of Ethiopia’s most dynamic coffee-producing regions. With altitudes ranging from 2,200-2,350m — making it one of the highest growing areas we source coffee from — and temperatures ranging from 10-23°C, the microclimate favors a slow ripening of the coffee cherries, contributing to exceptional sweetness and remarkable complexity in the cup.

The varieties grown—Gibirinna 74110 and Serto 74112—are disease-resistant selections from the Metu Bishari forest and developed by JARC in 1974. These varieties are valued not only for their resilience but also for their taste, and are now widely distributed in Ethiopia.

Drying at Green Spring is done on hanging beds and typically takes 21-28 days, with careful and constant use of a hygrometer to determine exactly when the batches reach the ideal humidity level. The result is a deeply expressive coffee that reflects both the specificity of the place and the meticulous attention paid to processing.
