Dilmer Alberca Castillo is a young and very dynamic coffee producer from Las Tinajas village in Tabaconas district. Dilmer’s father was one of the first to settle in Tinajas and taught Dilmer almost everything he knows about coffee production. El Mango is Dilmer’s two hectare farm which sits at an altitude of 1820masl on average. The farm is planted with Geisha, Caturra and Marshell, all very good quality varieties and ones Dilmer selected in order o reach high cup scores with his coffees.
In 2018 Dilmer got hold of some geisha seeds, up until that point he has only planted caturra and Mundo Novo, both of which produce well in the area and give good quality coffee, but Dilmer was striving for something more. Since then Dilmer has also started planting Marshell, Sidra and other exotic varieties and dreams of one day winning the Cup of Excellence competition. Dilmer is passionate about processing and enjoys creating different flavour profiles through his processing. He produces washed, honeys and naturals and tends to tailor the processing to the variety, using honey processing for caturra and washed or natural with a fermentation period in bags for geisha.
Work on the farm is carried out by Dilmer and his family, with the exception of some of the picking during the peak period where he hires pickers from the local community.
